Orange Yogurt Cake

Happy belated Mothers' Day! This week on FTC it's all about citrus(check out our Lemon Blueberry Muffins and Lemon Drizzle Cake!). Why? Because our mothers love citrus fruits ♡. My mother's favorite cake EVER is an orange chiffon cake which I made for her birthday a few months back. To celebrate this very special Mothers' Day we made more citrus-y food for them. Trust me when I say that this orange yogurt cake is loaded with orange flavour. Instead of the 1 tablespoon of orange zest the original recipe called for, I went ahead to add the zest of two large oranges. That gives the cake a wonderful rich orange flavour that my mother loves. Another thing that makes this cake so great is the addition of fresh orange slices onto the batter before baking - and after baking, the further addition of candied oranges. The cake tastes fantastic, with a moist creamy texture due to the incorporation of yogurt.

Orange Yogurt Cake

Ingredients for candied oranges:
2 oranges(you can also use blood oranges)
150g sugar
150ml water

Ingredients for cake:
200g flour
2 teaspoons baking powder
Pinch of salt
200g sugar
1 tablespoon fresh orange zest
150g thick Greek yoghurt
100g butter, melted and cooled down
2 large eggs, room temperature
1 teaspoon vanilla extract (I used half a vanilla pod and 1/2 teaspoon vanilla extract)
2 oranges(you can also use blood oranges)
Procedure for candied oranges:
1. In a pot mix water and sugar; cook on high heat until sugar dissolves. Bring to the boil, turn the heat down to medium and cook the syrup for 5 minutes. 
2.Cut the oranges (with the peel) into 3 mm thick slices. Add to the syrup and cook over a low heat for 15 minutes. 
3. Turn the heat off and set the pot aside for the oranges to cool down in the syrup.

Procedure for cake:
1. Preheat oven to 180ÂșC. Grease a 8" cake pan with butter and dust with flour. 
2. In a small bowl combine sugar and orange zest by rubbing them with your fingers. 

3. In a big mixing bowl, mix melted butter with orange sugar. Add yogurt and eggs until combined, then add vanilla extract and mix again. 
4. Mix in sifted flour with baking powder and salt, until batter is smooth.
5. Peel the remaining two oranges and cut them into slices about 5mm thick. Transfer batter into the prepared cake pan, and place sliced oranges on the top of batter. 
6. Bake for about 55-60 minutes, until a toothpick inserted in the middle of the cake comes out clean. Let cool in the pan for about 5 minutes, then take out of pan to cool completely. Top with the candied oranges.

The orange slices just sit on top perfectly and look wonderful baked. They don't dry out so their juices are still retained and adds on to the moistness of the cake.


This cake is FANTASTIC. I am in love with adding yogurt into my foods because it's healthier than milk and it also provides a great moistness to the cake. :-)
