Cheddar Cheese Herb Crackers

Finally. I have finally found the time to bake. Life's been so so hectic in University!!! These cheddar cheese crackers have been on my "To-bake list" since FOREVER. So happy that I finally found the time to make them. The time spent baking these could have been used to write a few paragraphs of my essay, but, I do NOT regret a single thing. These cheese crackers are heavenly!!!! They're crispy, frickin' cheesy and absolutely amazing. I've added italian herbs and a little roast chicken seasoning into the dough as well :-) You won't be able to stop popping them into your mouth. Oh, did I also mention how EASY they are?!?!

Time to over-eat again....

Ingredients:
56g butter(1/2 stick) unsalted butter, at room temperature
226g cheddar cheese, finely grated
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup plain flour
1/2 teaspoon italian herbs*
1/4 teaspoon roast chicken seasoning*

*For the seasoning, you can add anything you'd like! Thyme, oregano, rosemary...it's up to you! :-)


1. In the bowl of an electric stand mixer fitted with a paddle attachment, beat together butter, cheese, salt and pepper.  It will come together as a soft ball.  


2. With mixer on low-speed, slowly add flour.  Mixture will become dry and crumbly. 

3. Add two tablespoons of water, one tablespoon at a time.  Beat until mixture just comes together into a ball.  The mixture may take an extra teaspoon of water, but don’t add too much.  The dough should be moist but not wet.
4. Knead the herbs and seasonings into the dough.  Leaving streaks of the seasoning is just fine.  Wrap in plastic wrap and refrigerate for at least 30 minutes (an hour is better).  The dough can also be frozen for future use.

5. While dough chills, place a rack in the center and upper third of the oven and preheat oven to 375ºF/190ºC.  Line two baking sheets with parchment paper and set aside.
6. On a lightly floured work surface, roll dough very thin, about an eighth of an inch thick.  Dot a few holes on the crackers. Place crackers on prepared baking sheets. The pieces can be close together as they won’t expand much when baking.  Bake for 13 to 15 minutes until fragrant, golden brown, and crisp.  Allow to cool before serving.




There you have it!!! Super simple, delicious cheese crackers. Definitely making these for a party in the future. (Too simple!!!)
