Blueberry Coconut Macaroons

Coconut macaroons are one of my absolute favorite things to bake. Not only because they are so simple(requiring only 1 bowl & 1 spoon), but also because the macaroons taste SO SO good. Crisp on the outside, yet tender and slightly chewy on the inside. The burst of coconut flavour in the mouth is indescribable.(Ahh!!!) And what's more, I took Alison Thompson's recipe and changed a little thing - by adding blueberry jam. You don't even need fresh blueberries! Just a good quality blueberry jam will do the trick. You can also experiment with different sorts of jams - this recipe is really adaptable. :-) It will surely impress everyone.

Recipe adapted from Alison Thompson's BAKE
Ingredients:
4 egg whites
3 cups(300g) desiccated coconut
1 1/3 cups(300g) superfine sugar
2 teaspoons vanilla extract
1 1/2 tablespoons blueberry jam

Procedure:
1. Preheat oven to 200ºC/390ºF. Line baking pans with baking paper.
2. Combine the egg whites, coconut, sugar and vanilla into a bowl. Microwave the blueberry jam for about 15 seconds till warm. Add the blueberry jam into the bowl as well, and mix thoroughly till combined well. 





3. Press the mixture into firm moulds on the baking sheet. Bake for 7-10minutes, till the cookies are slightly golden brown.



Really. That's it. It's that simple! Do try this crazily simple and quick recipe out. The smaller macaroons I made took only about 5-7 minutes in the oven, while the bigger ones took 7-10 minutes. The process was so quick and relaxing!(I love recipes like that.)

  1. Thanks for the recipee, I've always been a big fan of candy, especially macaroons. I used to drive to this little shop that was a good 30 minutes from my house just to buy them, but it closed down a few months ago. This recipe makes very similar ones to that shop I'm so happy i found it!
