Dorayaki(Japanese pancakes with filling)

Ever heard of Doraemon? :-) Doraemon is the super-cute blue robot cat and his favorite food is Dorayaki. Dorayaki is basically a Japanese pancake sandwich, with delicious fillings between the two pancakes. The original Dorayaki contains red bean paste, but it has become so versatile that people put Nutella, chocolate, jam, buttercream, ice cream etc. between the two pancakes. The pancake itself is really fluffy and sweet; it has a subtle taste of honey which I really adore. They are really simple to make as well, and they don't have to be made into Dorayaki. They can just be normal breakfast pancakes!(I think if I ever want to make normal pancakes, I'll use this recipe) They taste soooo good and every bite would leave you wanting more. This was an impromptu creation. I wanted to use up the cake flour at home before I go overseas! The ingredients are all really basic. If you don't have cake flour, this is a good website to learn how to make your own using only two ingredients. 

Look at the aeration of the pancake! That shows how light and fluffy it really is. :-)
I filled my Dorayaki up with apricot jam(I also want to finish using my jams...) - it tasted delicious. Here are some suggestions for fillings:

- Red bean paste(you can get this premade at the grocery)
- Nutella + bananas omg yum
- Various jams(strawberry, forest berries, orange etc.)
- Ice cream!!!(If you're into ice cream sandwiches, click here)
- Various flavours of buttercream
- Cream cheese 
- Fruits

Recipe from Ochikeron
Ingredients:
2 eggs
50g granulated sugar

1 tablespoons honey
100g cake flour

1/2 teaspoon baking soda

2 teaspoons water

Cooking oil

Directions:
1. Beat eggs in a bowl. Add sugar and mix well. Add honey and mix well.


2. Sift cake flour and baking soda in 1. and quickly mix until combined. *Do not overmix 





3. Then add water and mix until smooth. *Do not overmix


4. Cover with a plastic wrap and let it rest in the fridge for 30 minutes.
5. Heat cooking oil in a pan on low, pour 2 tbsp. of the batter onto the pan, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.



6. While it's hot, put it in a closed container (or cover with a plastic wrap) to keep it moist, then continue making the next pancake.

7. Make a sandwich with the filling.


8. Press edges to close.


There you have it! Delicious Dorayaki. I know my Dorayakis don't look like the ones in Doraemon or in her video, and I think it's because I didn't read the instructions properly I kind of did not bother much about the strength of the fire :-S It's quite crucial so do take note and don't make the same mistakes as I did!!! 

Besides that, the taste and texture of the pancakes are great. :-) Do give this easy recipe a go!

  3. My kids are very fond of watching Doraemon...sometimes, they ask me to make the "dorayaki". I can make now, thanks to your stepwise instructions!

    1. It is important to let the mixture set in the fridge for at least 30 minutes, so that the mixture can rest and the consistency is even!
