Matcha Green Tea Shortbread

I'm a huge fan of anything matcha flavoured. I don't know why, I just really love green tea flavoured desserts. So when I found this recipe for matcha green tea shortbread, I knew I had to make it. The recipe is REALLY easy, and it only calls for 5 ingredients!! Anyway, making it was quite a breeze but abit messy because of the buttery dough.


By the way, because I wasn't so sure myself before I went to do some research, shortbread is a type of biscuit that has a more crumbly texture due to it's high fat content relative to normal biscuits. It's more buttery and usually has this melt-in-your-mouth texture, which I really love!


Anyway, I'm quite happy with how the shortbreads turned out! They really taste like the ones sold in japanese supermarkets: buttery and chockfull of that aromatic green tea flavour :-)


Matcha Green Tea Shortbread


Recipe from Kirbie Cravings
Ingredients:
2 1/4 cups all-purpose flour
a pinch of salt
226.8 g butter, cut into small pieces
2 1/2 tablespoons  high quality matcha (green tea) powder
1/2 cup granulated sugar
    Directions:
    1. Whisk flour and salt together in a small bowl.
    2. In a separate bowl, beat butter until creamy.  Add matcha powder and beat until mixture is a uniform green color. Add sugar continue beating until light and fluffy.




    3. Add about half of the flour, then mix on low speed.  Gradually add remaining flour, mixing just until blended. The mixture should look crumbly; but if you squeeze it between your fingers, it will come together. Gather the dough into a large ball.
    4. Roll out dough to 1/3-inch thickness between two pieces of parchment paper. Peel off top parchment paper.
    5. Cut out as many cookies as possible using cookie cutter and place on cookie sheets 1-inch apart. Re-roll remaining dough and repeat until all of the dough is used up. Refrigerate cut outs for one hour.





    6. Preheat oven to 325 F. Bake for about 17 minutes or until the cookies are dry and firm to the touch. The edges might just start turning brown.

    If you're a big matcha fan like me, try out this recipe! The green tea flavour comes out quite strongly, and the shortbreads go perfectly with a cup of green tea :-)

    2. I bought mine from NTUC finest (sg gardens) at this jap section!! The one i bought is rly small and quite hard to find though it's in this tiny little green can.. If you rly can't find it you can try japanese supermarkets like mediya maybe? Hope this helps!!
