The BEST Brownies ever

I am on a diet. These brownies killed my diet! I've made these brownies twice in a week for various occasions, and my mind told me, "No, don't consume any of that!" but my greedy mouth and giant stomach said, "Go for it. Just do it.". Yep, I listened to my digestive organs in the end. These brownies are TO-DIE-FOR. I have never tried a brownie that could make me go crazy like these ones. My idea of a perfect brownie is this: Crispy on the top, chewy on the inside, dense, rich, moist, not too thick, non-cakey, ultra chocolately, slightly fudgy and gooey(but not uncooked) in the middle; a brownie that can make me bite into it and close my eyes, and reflect about life for a little while by the window(yes, I did that.). These brownies are amazing. I know there are lots of recipes out there that say that those brownies are the best, but trust me, just try this one out. Just try it. You will not regret it. 

I've always been unimpressed by store-bought brownies, they're stale, cakey, not crisp on the outside and they're chunky hard. This recipe is from Alison Thompson(who's a baking genius, by the way.)'s BAKE. Her recipes have never once failed me and I trust the cook book so much I might just die. These brownies are the absolute best, but unfortunately, not good for a dieting soul. Okay, I promise I'll go to the gym tomorrow...


If you prefer thicker brownies you can go ahead and use a deeper baking pan. I used a 1.5" baking pan for this recipe, because I prefer my brownies to be thinner.

Also I've decided to put our recipes in BOTH cups and grams now. :-) 

Recipe from Alison Thompson's BAKE
Ingredients:
2 1/2 cups(300g) chopped dark chocolate(or chocolate chips)
1 cup(250g) unsalted butter, diced
4 eggs
1 3/4 cups(400g) superfine sugar
1 1/3 cups(200g) plain flour
1 1/4 cups(150g) chopped dark chocolate, extra
1 1/4 cups(150g) finely chopped walnuts(optional) - I took this out because I don't like the combination of nuts and chocolate

Directions:
1. Preheat oven to 325ºF/160ºC. Line a baking pan with parchment paper.
2. Melt the chocolate and butter together in a double boiler or in the microwave unti smooth.
3. Whip the eggs and sugar in the bowl of an electric mixer fitted with the whisk attachment, on high speed for 10 minutes until pale and creamy. Fold in the melted chocolate.


4. Sift the flour into the bowl and add the extra chocolate and walnuts. Fold gently unti combined. Pour the mixture into the prepared pan.




5. Bake the brownies for 30 minutes, until risen and firm to the touch. Allow to cool completely in the pan, then cut into squares.


I had a really difficult time photographing these brownies because I kept picking up the crumbs and eating them HAHA. Try it to believe it. These brownies are AMAZING. You will love them, your family will love them, your friends, your acquaintances, your enemies, EVERYONE.

    1. Hello! This recipe opted for dark chocolate and the sweetness level of the brownie was just right. If you are the kind of person who doesn't like the bitterness of dark chocolate, don't worry, there won't be any hint of bitterness at all. I would recommend using dark chocolate FIRST before experimenting with milk choc, since their fat/moisture content are different :-)

    1. Hello. I used dark chocolate chips from the brand RED MAN. Any brand is fine as long as it is good quality! :) (hersheys?)

    1. Hi! Melt the 2 1/2 cups(300g) chopped dark chocolate(or chocolate chips) :-) The extra chocolate is just to stir in.
